The Jamaican coast will host a master of modern French gastronomy this November as Round Hill Hotel & Villas welcomes Chef Alex Dilling for a four-day culinary residency. From November 25 to 28, 2026, the London-based chef will transition his high-precision kitchen to the Montego Bay resort for a series of exclusive events.

Dilling, whose eponymous restaurant at London's Hotel Café Royal secured two Michelin stars within six months of its 2023 opening, is recognized for blending classical French foundations with contemporary artistry. His presence at the resort marks a continuation of Round Hill’s luxury programming, timed specifically to coincide with the Thanksgiving holiday.

The residency opens on November 25 with a welcome cocktail hour, allowing guests to engage directly with the chef. The schedule proceeds with a live culinary demonstration on November 26, revealing the techniques behind his acclaimed kitchen style. The engagement concludes on November 28 with a formal five-course tasting menu, serving as the centerpiece of the collaboration. Josef Forstmayr, managing director at Round Hill, noted that the residency represents the property's ongoing commitment to pairing its historic 110-acre estate with world-class international talent.
