The Tres Locos kiosk, located in Terminal 1 at Concourse G, offers menu staples such as Bacon Breakfast, Chicken Fajita, Picadillo Beef, and Pork Carnitas. This deployment aligns with a broader industry trend, as the hot food vending market in North America is projected to climb from $5.5 billion in early 2026 to $9.6 billion by 2036. Jane Hartgrove, the head of Tres Picosos, noted that the platform addresses the demand for quality food during hours when traditional airport concessions may be shuttered.

Tres Picosos Brings Automated Burritos to U.S. Airports
Travelers at Minneapolis-St. Paul International Airport can now access hot, authentic Mexican cuisine around the clock through a new partnership between Tres Picosos and Evolvending. The automated kiosk, branded as Tres Locos, serves a variety of burritos and street-style tacos, marking a strategic expansion into the automated dining sector.

Evolvending plans to scale this model, with additional airport locations already utilizing the platform, including Boston Logan, Charleston, and Southwest Florida International. Valentina Ellison, CEO of Evolvending, emphasized that integrating recognizable food brands allows airport operators to provide a more diverse, flexible dining experience for passengers. Tres Picosos, a woman-owned business based in Colorado, continues to leverage its existing distribution network to support these high-traffic transit hubs.
