Siip Coffee Debuts AI-Driven App to Decode Personal Taste Profiles

Six in ten coffee drinkers claim to prefer medium roasts, yet their actual ratings consistently favor lighter profiles. San Francisco-based startup Siip Coffee is addressing this disconnect between consumer perception and palate with a new app and subscription service designed to map individual flavor preferences through systematic, data-backed discovery.

Siip Coffee Debuts AI-Driven App to Decode Personal Taste Profiles

The platform functions by building an evolving Taste Profile for every user. By scanning bags from cafes or grocery stores and providing a single rating, drinkers move beyond vague descriptions toward identifying specific origins, processing methods, and roast levels. CEO Nick Spilger notes the goal is to bridge the gap between enjoying a cup and understanding the nuances behind the flavor. The system continuously refines its recommendations, allowing subscribers to explore rare single-origin beans and limited releases from partners like Onyx Coffee Lab and Equator Coffees.

Data from the app reveals a recurring pattern: users often gravitate toward familiar labels like "chocolate" or "nutty" in surveys, while their blind ratings show a stronger affinity for floral or berry notes. By offering comparative shipments—such as two coffees from the same region processed differently—Siip allows subscribers to experience how production techniques alter the final cup. The app is available globally for free, while the tailored subscription service operates in the United States, priced at $14.40 for initial bags and $18 thereafter.
